The History of Recipes
Experts have tracked the existence of recipes way back into ancient history, at least as far back into recorded history as ancient Egypt, and maybe even further. Interesting though that is, these, old recipes were just simple pictorial recipes for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to academics are some ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. As we move into The time of the roman empire 25BC a man called Apicius compiled some documents describing recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, something we still use today. Aspicius recounts how the cooks of Roman times used a wide range of spices, including some that we all recognise for example bay, fennel and asafoetida. Over the next few centuries, the wealthy families of Europe competed with each other to serve up the most exotic meals, and because of this chefs and their recipe collections were at a premium. However, it wasn`t until the 19th century that cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, testing, and writing down recipes common in their social group. By the arrival of the twentieth century, recipe books were in high demand, mostly due to higher levels of literacy, leisure time and having more disposable income. |
