The History of Recipes
Written cooking instructions as a concept can be tracked back into distant history, at least as far into history as pharonic Egypt, and possibly even further. Having said that, in the main part, these ancient records were just very basic hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the oldest recipe discovered so far, according to experts is a collection of ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Later on, in The time of the romans 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the roman meals were separated into starters, entrees and desserts, something that is very familiar to us today. This early Roman chef informs us how the cooks of his times made use of many different aromatic flavors, including a few that will be familiar to modern cooks such as thyme, mint and parsley. Later on, in the 15th century, knights returning from the crusades brought us many foods and spices from Arab cuisine, including spices such as basil and coriander. These new foods and spices was responsible for an outbreak in recipe books, some of which are kept safe in private cookery archives. Over the succeeding few centuries, the wealthy families of Europe competed to offer the most extravagent banquests, and because of this chefs and their recipe collections became highly prized. Nevertheless, it was during the 1800s that cookery and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collating, trying out, and publishing popular recipes of the day. When we get to the 20th century, recipe publications are in great demand, as a result of higher levels of literacy, more spare time and disposable income. |
