The History of Recipes
It is actually possible to track the history of recipes far back into antiquity, in truth as far back into recorded history as the early Egyptians, and maybe even further. Interesting though that is, sadly, these old cookbooks were just basic hieroglyphic instructions for meal preparation.
The truth of the matter is, the most ancient recipe found, according to academics are some tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. As we move into Roman times 25BC a roman called Apicius wrote some documents which described recipes prepared by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and desserts, a very modern way of dining. Aspicius also informs us how the ancient cooks made use of a wide range of aromatic flavours, including some familiar names such as bay, rue and parsley. Later, in the 15th century, people returning from the crusades brought back many new foods, spices and herbs from the East, including spices such as coriander, parsley, and basil. These new foods and tastes prompted a surge in books on cookery, most of which are kept safe in private libraries. During the following few centuries, the powerful and wealthy houses tried to serve the most exotic banquets, and as a result chefs and their recipes were at a premium. However, it wasn`t until the 1800s that fine cooking and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to assembling, trying out, and writing down recipes for their fellow cooks to enjoy. The revolution that is television gave us celebrity chefs and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to search through thousands of recipes just like those on sites such as the one you are reading now. |
