The History of Recipes
It is quite feasible to trace the history of recipes far back into antiquity, in truth as far back as the ancient Egyptians, and possibly even further than that. However, these, early records were just very basic hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe in existence, according to Professor Solomon Katz, is a series of stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. As we move into Roman times around 25BC a roman called Apicius wrote a number of scripts which described recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the meals were separated into starters, main meal and afters, a very modern way of dining. Aspicius recounts how the Roman cooks used many different aromatic flavours, including a few that will be familiar to modern chefs such as bay, mint and dill. Later, in the 15th century, people returning from the crusades brought back many new spices and herbs from Arab cooking, such as coriander, basil and rosemary. The introduction of these new foods and spices was responsible for an eruption in manuscripts on cookery, the majority of which are kept safe in private libraries. By the advent of the 1900s, cook books are starting to become popular mostly due to more people being able to read, more free time and being a little richer. The revolution that is television gave us celebrity TV chefs and the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes like those on sites such as the one you are reading now. |
