The History of Recipes

Transcribed cooking instructions as a concept can be traced back into the far past, certainly as far back into history as the early Egyptians, and quite possibly further than that. In practice though, these, early cook books were just very basic pictorial recipes for food preparation.

In an interesting twist, the oldest recipe discovered so far, according to Professor Solomon Katz, are a few clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`.

During the time of the Romans a man called Apicius created a few documents detailing recipes enjoyed by wealthy roman citizens. In his works, he tells us how the roman meals were split into hors d`oeuvre, main course and dessert, something that is very familiar to us today. Aspicius also informs us how the Romans were skilled in the use of a good variety of herbs and spices, including a few you will know like basil, rue and dill.

Moving our culinary historical trip onwards, we have a couple of recipe books from the fourteenth century ; one book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Despite their titles, these are not about the indian food that appears on menues today, but rather accounts of the types of meals prepared for the upper classes of those days.

Later on, in the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, including rosemary and coriander. The introduction of these new tastes prompted a torrent in publications on food, some of which still exist in private cookery archives.

When we get to the 20th century, cooking publications are highly popular due to higher levels of literacy, more leisure time and being a little richer.
