The History of Recipes
Historians have found proof that recipes existed back into antiquity, at least as far as pharonic Egypt, and potentially, even further back. However, these, old records were just primitive pictorial, hieroglyphic or cunieform recipes for meal preparation.
Later on, in Roman times 25BC a man called Apicius compiled a collection of documents describing recipes enjoyed by his fellow Romans. In his works, he recounts how the meals of wealthy Romans were split into starters, entrees and desserts, a style of dining still practiced today. He also describes how the ancient cooks used many aromatic flavours, including a few that will be familiar to modern chefs such as thyme, rue and dill. During the succeeding few hundred years, the powerful families of Europe competed with each other to serve the most extravagent banquests, and because of this the best chefs and their collection of recipes were much in demand. Nevertheless, it was during the 1800s that fine cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collating, trying out, and publishing popular recipes of the day. By the arrival of the 1900s, cooking books were in high demand, as a result of higher levels of literacy, people having increased leisure time and having more disposable income. |
