The History of Recipes
Food historians have tracked the existance of recipes far back into ancient history, certainly as far back into history as ancient Egypt, and maybe even further. Interesting though that maybe, mostly, these ancient cook books were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
During the time of the Roman Empire a man called Apicius created some scripts describing recipes enjoyed by his fellow Romans. In his works, he describes how the meals were separated into hors d`oeuvres, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the ancient chefs were skilled in the use of many spices and herbs, including many that are still in use today such as thyme, fennel and asafoetida. Over the following few hundred years, the upper-class families of Europe competed with each other to serve the most exotic banquets, and as a result cooks and their collection of recipes were much in demand. However, it wasn`t until the 1800s that fine cooking and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, testing, and recording recipes for their fellow cooks to enjoy. By the arrival of the 20th century, cooking books are in high demand, due to increased literacy, more free time and having more money. |
