The History of Recipes
It is quite possible to prove the history of written cooking instructions way back into ancient history, certainly as far back into history as early Egypt, and maybe even further. Interesting though that is, in the main part, these early recipes were just primitive hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe in existence, according to food historians is a series of stone tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Moving our culinary historical trip onwards, there are a couple of interesting books which appeared in the fourteenth century - a cookery book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, these books are nothing to do with the indian curry that is served today, but rather descriptions of the types of food cooked for the rich people of that time. In the 15th century, the Crusaders brought back many foods and herbs from the holy lands, including spices like coriander, basil and rosemary. These new spices and herbs created a surge in recipe books, the majority of which still exist in private collections. Over the next few hundred years, the powerful families of Europe competed with each other to offer the most exotic meals, and consequentially the best chefs and their recipes could command a high salary. Even so, it wasn`t until the 1800s that cookery and cookery books became really popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, verifying, and recording recipes to help cooks of their time. When we get to the 1900s, cooking books were in great demand, mostly as a result of better eduction, people having increased free time and having more money to spend. The arrival of TV brought us TV cookery programs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes such as those found on the site you are now reading. |
