The History of Recipes
Food historians have found proof that recipes existed back into distant history, in truth as far back into history as early Egypt, and possibly even further than that. In practice though, generally, these ancient cook books were just primitive hieroglyphic instructions for food preparation.
Interestingly, the most ancient recipe discovered so far, according to experts in ancient history are a few ancient tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. Later on, in Roman times 25BC a man called Apicius compiled a number of scripts which described recipes enjoyed by his fellow Romans. He recounts how the roman meals were separated into hors d`oeuvre, main course and dessert, something that is very familiar to us today. This early Roman chef recounts how the Roman chefs used a good variety of spices and herbs, including some familiar names for example thyme, mint and parsley. In the fifteenth century, knights returning from the crusades brought us many new foods and herbs from middle-east cuisine, such as coriander, parsley, basil and rosemary. These new culinary innovations prompted an increase in recipe publications, some of which are now in private cookery archives. By the arrival of the 1900s, recipe publications are increasing in popularity mostly as a result of higher levels of literacy, people having more spare time and a general increase in wealth. Like it or not, the introduction of television brought us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing us all to search through thousands of recipes such as those found on this recipe site. |
