The History of Recipes
Historians have tracked the existance of recipes back into history, in fact as far back as pharonic Egypt, and maybe even further. However, these, early records were just simple hieroglyphic instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered, according to food historians is a series of clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful. During the time of the Roman Empire a man called Apicius compiled a few documents showing how to cook the recipes cooked by his fellow Romans. In his works, Apicius tells us how the meals were separated into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. Aspicius informs us how the ancient chefs were skilled in the use of a wide range of herbs and spices, including a few that will be familiar to modern cooks like basil, rue and parsley. As our culinary historical trip moves on a few more years there are some interesting books which were published in the 1300s : a book called `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, these books have no connection with the indian food that is popular today, but instead recipes for the types of food on the menus of the rich and wealthy people of the period. In the fifteenth century, the Crusaders brought back a variety of foods and spices from the holy land, including spices such as parsley, basil and rosemary. The introduction of these new foods and spices caused an outbreak in publications on food, many of which are now in private libraries. By the arrival of the 20th century, cooking books were greatly in demand as a result of better eduction, leisure time and having more money to spend. The introduction of television brought us TV chefs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting us all to access thousands of recipes just like those on our web site. |
