The History of Recipes
Food historians have tracked the existence of recipes back into the far past, in truth as far back as the Egypt of the Pharoahs, and maybe further still. In practice though, in the main part, these ancient recipes were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the oldest recipe in existence, according to food historians are a few tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. As we move into The time of the roman empire 25BC a roman called Apicius wrote a few documents detailing recipes enjoyed by wealthy Romans. In his publication, Apicius describes how the roman meals were separated into appetizers, main meal and afters, something we still use today. He also tells us how the Roman cooks made use of many different herbs, including a few that will be familiar to modern cooks like thyme, mint and asafoetida. Over the following few hundred years, the powerful and wealthy competed to serve the most exotic banquets, and as a consequence, chefs and their recipes could command a high salary. Notwithstanding that, it was during the 19th century the formal cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collating, verifying, and publishing recipes to allow everyone to enjoy them. By the arrival of the 20th century, cook books were highly popular mostly due to more people being able to read, increased leisure time and having more money to spend. |
