The History of Recipes
Transcribed cooking instructions as a concept can be observed far back into the far past, certainly as far back as the early Egyptians, and maybe further still. In practice though, sadly, these early recipes were just primitive hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to experts is a collection of clay tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful. Much later, in Roman times a roman called Apicius wrote some scripts detailing recipes cooked by wealthy roman citizens. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, a style of dining still practiced today. Additionally, he recounts how the ancient chefs were skilled in the use of many different herbs and spices, including some that we all recognise such as thyme, mint and parsley. Continuing our culinary historical journey, we find two recipe books published in the 14th Century - a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Don`t be fooled by the titles though, these books are not about the spicy food that is popular today, but instead recipes for the types of meals on the menues of the rich and powerful of that period. Later on, in the 15th century, people returning from the crusades brought back many foods and spices from the holy land, including coriander, parsley, and basil. The introduction of these new foods and spices created an increase in cookery books, many of which are now in private collections. The TV revolution gave us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting us all to access massive numbers of recipes like those on our web site. |
