The History of Recipes
Historians have tracked the existance of recipes way back into ancient history, in truth as far as pharonic Egypt, and potentially, even further back. Interesting though that is, mostly, these ancient records were just simple hieroglyphic instructions for preparing food.
Progressing into The time of the romans 25BC a man called Apicius compiled a few documents which described recipes prepared by wealthy Romans. He describes how the meals of wealthy Romans were separated into starters, entrees and dessert, something we still use today. Aspicius recounts how the cooks of his times made use of a wide range of herbs, including a few that are still present in modern kitchens such as basil, rue and parsley. In the 15th century, the Crusaders brought back many new spices and herbs from Arab cuisine, including spices such as coriander, parsley, and rosemary. These new herbs and spices was responsible for a surge in recipe manuscripts, most of which are kept safe in academic collections. By the arrival of the twentieth century, cooking books were increasing in popularity mostly due to higher levels of literacy, more spare time and having more money to spend. |
