The History of Recipes
It is quite feasible to prove the history of written cooking instructions far back into ancient history, certainly as far back into recorded history as the Egypt of the Pharoahs, and possibly even further. Having said that, sadly, these early records were just primitive pictorial, hieroglyphic or cunieform recipes for meal preparation.
As we move into The time of the romans 25BC a roman called Apicius created a collection of scripts detailing recipes enjoyed by wealthy Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into appetizers, entrees and afters, a very modern way of dining. This early Roman chef informs us how the Roman cooks were skilled in the use of many aromatic flavors, including a few you will know like basil, mint and asafoetida. During the next few hundred years, the upper classes competed to serve the most extravagent banquests, and as a result cooks and their collection of recipes were much in demand. Nevertheless, it was during the 1800s the formal cooking and cookery books became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collecting, trying out, and writing down recipes to allow everyone to enjoy them. Like it or not, the introduction of TV gave us TV cooks and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
