The History of Recipes
It is quite feasible to trace the history of recipes way back into the far past, in truth as far back into history as early Egypt, and potentially, even further back. Interesting though that is, mostly, these old records were just basic pictorial recipes for meal preparation.
As we move into Roman times around 25BC a roman called Apicius assembled a collection of documents which described recipes enjoyed by wealthy roman citizens. In his works, he recounts how the meals were separated into appetizers, main meal and dessert, a style of dining still practiced today. Aspicius also informs us how the cooks of Roman times used a good variety of aromatic flavors, including some familiar names for example bay, rue and dill. Later, in the 15th century, knights returning from the crusades brought back many new foods and herbs from the Middle-East, including spices like coriander, parsley, and basil. These new foods and tastes led to an explosion in recipe publications, many of which are kept safe in academic collections. By the advent of the 1900s, cooking books are increasing in popularity mostly as a result of increased literacy, people having increased spare time and having more money to spend. |
