The History of Recipes
Experts have proved the existance of recipes far back into antiquity, certainly as far into history as ancient Egypt, and potentially, even further back. Interesting though that maybe, sadly, these old cookbooks were just basic hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to food historians is a collection of tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. During the time of the Roman Empire a roman called Apicius wrote some scripts describing recipes cooked by his fellow Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvres, main meal and afters, something that is very familiar to us today. He also tells us how the cooks of Roman times used a wide range of spices and herbs, including some that we all recognise such as bay, mint and parsley. As our culinary historical trip moves on a few more years we find a couple of interesting recipe books which appeared in the fourteenth century ; a book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Although the titles sound familiar, these books have no connection with the spicy food that appears on menues today, but rather recipes for the types of meals cooked for the rich and powerful of the period. In the fifteenth century, people returning from the crusades brought back many foods and herbs from Arab cuisine, including spices like basil and coriander. These new spices and herbs created an explosion in manuscripts on cookery, some of which still exist in private collections. Like it or not, the introduction of television gave us cooking programs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes just like those on this site. |
