The History of Recipes
Academics have traced the existance of recipes far back into the distant past, in fact as far into history as pharonic Egypt, and potentially, even further back. However, these, ancient records were just very simple pictorial recipes for meal preparation.
Interestingly, the most ancient recipe discovered, according to food historians is a series of stone tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. During Roman times around 25BC a roman called Apicius created a few documents showing how to cook the recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main meal and dessert, a style of dining still practiced today. This early Roman chef recounts how the ancient cooks used many herbs and spices, including a few you will know such as basil, rue and parsley. During the succeeding few hundred years, the upper classes strove to offer the most extravagent meals, and consequentially the best chefs and their collection of recipes could command a high salary. Nevertheless, it was during the 19th century that formal cookery and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collating, verifying, and writing down popular recipes of the day. By the arrival of the 20th century, cookbooks were greatly in demand as a result of better eduction, people having increased leisure time and having more money to spend. |
