3/4 cup chili sauce
2 tbsp (to 4 tb.) lemon juice
1 tbsp (to 2 tb.) prepared
1 horseradish
2 tsp worcestershire sauce
1/2 tsp grated onion
1 dash bottled hot pepper

Combine all ingredients; mix well. Add salt to taste. Chill. Makes 1

The History of Recipes
Recipes as a concept can be traced way back into ancient history, in truth as far into history as the Egyptians, and potentially, even further back. Interesting though that maybe, sadly, these early records were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe found, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. As we move into Roman times 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes cooked by the Romans. He describes how the meals were divided into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. This early Roman chef tells us how the chefs of Roman times were skilled in the use of a good variety of spices, including some that we all recognise like basil, rue and asafoetida. As we move on, there are some interesting books dating from the 14th Century ; a recipe book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, these have no connection with the indian curry that is popular today, but rather descriptions of the types of meals prepared by the cooks of the rich and wealthy people of that time. Later, in the fifteenth century, the Crusaders brought back a variety of foods, spices and herbs from the Middle-East, such as parsley and basil. The introduction of these new tastes prompted an explosion in recipe books, many of which are now in academic collections. During the next few centuries, the powerful families of Wesstern Europe strove to offer the best banquets, and as a result cooks and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the 19th century that cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collecting, testing, and recording recipes that were common in the better off homes of the day. By the advent of the 20th century, recipe publications were greatly in demand due to increased literacy, people having more spare time and being a little richer. The revolution that is television brought us TV chefs and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on this recipe site. |
