The History of Recipes
Written recipes as an idea can be tracked way back into the far past, in fact as far back into history as the Egyptians, and maybe further still. However, sadly, these ancient cookbooks were just very basic hieroglyphic or cunieform instructions for food preparation.
Later on, in The time of the roman empire around 25BC a man called Apicius assembled a collection of scripts which described recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, entrees and afters, something we still use today. Additionally, he recounts how the Roman chefs were skilled in the use of many different spices and herbs, including a few you will know such as bay, mint and parsley. During the following few hundred years, the powerful families of the West tried to serve the most exotic banquets, and consequentially chefs and their recipes were at a premium. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collating, testing, and publishing recipes for their fellow cooks to enjoy. The arrival of television brought us celebrity chefs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, allowing us all to access massive numbers of recipes like those on this recipe site. |
