1/4 cup butter or margarine, melted
1/4 cup cocoa
3/4 cup applesauce
1 1/4 cup unsifted flour
1 cup sugar
3/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/2 cup raisins
Directions
In bowl, blend butter and cocoa. Add applesauce. Set aside. In large
bowl, combine dry ingredients. Add cocoa mixture and eggs. Blend
just until moistened. Fold in raisins/ Spoon into greased medium
sized muffins cups. Bake at 350 degress for 20 minutes. Yield:12

The History of Recipes
We are able to follow the history of meal recipes back into the far past, in truth as far as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that maybe, mostly, these ancient cookbooks were just basic hieroglyphic recipes for preparing meals.
The truth of the matter is, the most ancient recipe discovered so far, according to historians is a series of tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. Later on, in The time of the roman empire around 25BC a man called Apicius created a number of documents which described recipes prepared by the Romans. He recounts how the meals were split into hors d`oeuvres, main course and desserts, something that is very familiar to us today. He also informs us how the cooks of his times made use of a wide range of spices and herbs, including a few that will be familiar to modern chefs for example bay, rue and dill. As we move on, we have two interesting cookery books published in the fourteenth century ; one book called `Forme of Cury`, and another entitled `Curye on Inglish`. Although the titles sound familiar, these books are not about the indian curry that appears on menues today, but rather descriptions of the types of food prepared by the cooks of the rich people of those days. Later, in the fifteenth century, knights returning from the crusades brought us many new foods and spices from middle-east cuisine, including spices like basil and coriander. The introduction of these new herbs and spices caused an increase in books on cooking, some of which are now in academic collections. By the time we get to the 1900s, cooking publications were increasing in popularity as a result of higher levels of literacy, people having increased spare time and having more money. |
