The History of Recipes
It is quite feasible to prove the history of recipes way back into distant history, in truth as far as the Egyptians, and maybe further still. However, sadly, these early records were just primitive pictorial instructions for preparing food.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, is a series of tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. Later on, in The time of the romans 25BC a man called Apicius assembled some documents showing how to cook the recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals were divided into hors d`oeuvre, main meal and desserts, something that is very familiar to us today. This early Roman chef describes how the cooks of his times used many spices, including a few that will be familiar to modern chefs for example bay, mint and parsley. Later on, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from the East, including parsley and basil. The introduction of these new tastes prompted an explosion in books on cooking, some of which are kept safe in private cookery archives. Over the succeeding few centuries, the powerful families of Europe strove to offer the best banquets, and as a result the best cooks and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collating, testing, and publishing the recipes of their peers. When we get to the 20th century, recipe publications were greatly in demand due to increased literacy, more leisure time and being a little richer. The TV revolution brought us TV chefs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to search through thousands of recipes like the ones you can find on this web site. |
