The History of Recipes
It is possible to follow the history of written recipes way back into ancient history, at least as far back as the ancient Egyptians, and potentially, even further back. Having said that, in the main part, these early recipes were just primitive hieroglyphic recipes for preparing meals.
In fact, the oldest recipe in existence, according to Professor Solomon Katz, are some ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Progressing into The time of the roman empire 25BC a man called Apicius compiled some scripts detailing recipes cooked by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the early Romans were skilled in the use of many spices, including some that we all recognise such as thyme, rue and dill. For the centuries that followed, the rich families of Europe competed to serve up the most exotic banquets, and as a consequence, the best chefs and their recipe collections were highly sought after. Nevertheless, it wasn`t until the 19th century the formal cooking and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collecting, testing, and writing down the recipes that were being prepared for the better households. The introduction of the TV brought us TV cookery programs and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes like the ones you can find on this web site. |
