The History of Recipes
We can track the history of meal recipes back into distant history, in fact as far as pharonic Egypt, and potentially, even further back. Interesting though that maybe, these, old records were just very basic hieroglyphic recipes for preparing meals.
In fact, the most ancient recipe discovered, according to Professor Solomon Katz, are a few stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Progressing into The time of the roman empire 25BC a man called Apicius compiled a number of scripts showing how to cook the recipes prepared by wealthy Romans. In his works, Apicius tells us how the roman meals were separated into appetizers, main course and dessert, a very modern way of dining. Additionally, he informs us how the chefs of Roman times were skilled in the use of many herbs and spices, including a few that will be familiar to modern cooks such as bay, fennel and dill. Later on in the 1400s, knights returning from the crusades brought us many new foods and herbs from the holy land, including spices like coriander, parsley, basil and rosemary. The introduction of these new herbs and spices led to an increase in publications on food, most of which are now in private collections. For the centuries that followed, the wealthy families of Wesstern Europe strove to lay on the most extravagent meals, and consequentially the best chefs and their collection of recipes were highly sought after. Even so, it was during the nineteenth century that fine cookery and recipe books became popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collating, verifying, and publishing recipes for their fellow cooks to enjoy. By the time we get to the 20th century, recipe publications are starting to become popular mostly as a result of better eduction, people having increased leisure time and being a little richer. The introduction of television brought us cooking programs and the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to search through massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
