The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into ancient history, at least as far back into history as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, generally, these old records were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe discovered so far, according to food historians are a few stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. As we move into The time of the romans 25BC a roman called Apicius compiled some scripts describing recipes prepared by wealthy Romans. He recounts how the roman meals were separated into hors d`oeuvres, main course and dessert, a style of dining still practiced today. Aspicius recounts how the cooks of Roman times made use of many different herbs, including some that we all recognise for example basil, rue and asafoetida. Closer to modern times, there were some recipe books published in the fourteenth century - a book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these books are not about the indian food that is popular today, but rather recipes for the types of food served to the rich and wealthy people of the time. Later, in the 15th century, people returning from the crusades brought us many foods and spices from Arab cuisine, including spices like coriander, basil and rosemary. These new culinary innovations caused a torrent in recipe manuscripts, many of which still exist in private libraries. Like it or not, the introduction of TV gave us TV cookery programs and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing everybody to search through thousands of recipes like those on the site you are now reading. |
