The History of Recipes
It is quite possible to trace the history of written cooking instructions far back into the distant past, in fact as far back into recorded history as the early Egyptians, and maybe further still. Having said that, these, ancient records were just primitive pictorial recipes for food preparation.
The truth of the matter is, the most ancient recipe found, according to experts in ancient history are a few ancient tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. As we move into Roman times around 25BC a roman called Apicius created a few scripts showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the roman meals were divided into hors d`oeuvre, main meal and dessert, a very modern way of dining. Aspicius also informs us how the Romans used a wide range of spices and herbs, including many that are still in use today for example thyme, rue and asafoetida. Later, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from the Middle-East, including coriander, parsley, and rosemary. These new culinary innovations prompted an eruption in publications on food, the majority of which still exist in private collections. During the following few centuries, the families of Europe strove to serve the most exotic banquets, and as a result the best cooks and their recipes increased in prestige. Notwithstanding that, it wasn`t until the 19th century that fine cookery and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and recording recipes common in their social group. The revolution that is television gave us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting everybody to access thousands of recipes just like those on this site. |
