The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions back into the distant past, certainly as far back into history as the Egyptians, and potentially, even further back. Interesting though that maybe, generally, these early recipes were just very simple hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. As we move into The time of the romans 25BC a man called Apicius assembled a number of scripts detailing recipes enjoyed by wealthy roman citizens. In his publication, he recounts how the roman meals were divided into starters, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the cooks of Roman times made use of many different aromatic flavors, including a few that are still present in modern kitchens for example bay, fennel and dill. Later, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab cuisine, including spices like rosemary and coriander. These new spices and herbs was responsible for a torrent in cookery books, the majority of which are now in private collections. Like it or not, the introduction of TV brought us TV cooks and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes like those on sites such as this. |
