The History of Recipes
It is quite possible to track the history of transcribed cooking instructions back into history, certainly as far as early Egypt, and possibly even further than that. Interesting though that maybe, mostly, these old cookbooks were just very simple hieroglyphic recipes for preparing food.
Progressing into The time of the roman empire 25BC a roman called Apicius wrote a few documents which described recipes prepared by wealthy roman citizens. He tells us how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. Additionally, he tells us how the Roman cooks were skilled in the use of a wide range of herbs, including some familiar names such as basil, mint and parsley. For the centuries that followed, the powerful and wealthy tried to lay on the most exotic meals, and consequentially cooks and their recipes were much in demand. Notwithstanding that, it wasn`t until the 1800s that fine cookery and recipe collections became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to assembling, verifying, and writing down the recipes that were being prepared for the better households. The introduction of the TV gave us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes just like those on the site you are now reading. |
