The History of Recipes
It is possible to track the history of written recipes far back into distant history, in fact as far back into history as the early Egyptians, and quite possibly further than that. Having said that, mostly, these old cook books were just primitive hieroglyphic or cunieform instructions for meal preparation.
In fact, the most ancient recipe in existence, according to Professor Solomon Katz, are a few clay tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. Later on, in The time of the romans around 25BC a roman called Apicius created some scripts showing how to cook the recipes enjoyed by wealthy roman citizens. He tells us how the roman meals were divided into starters, entrees and desserts, something that is very familiar to us today. Aspicius recounts how the chefs of Roman times used many different herbs, including many that are still in use today for example basil, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought back a variety of foods, spices and herbs from Arab countries, including spices like parsley, basil and rosemary. These new culinary innovations was responsible for an outbreak in books on cookery, some of which are kept safe in private collections. By the time we get to the 20th century, cookbooks are greatly in demand due to more people being able to read, people having increased free time and being a little richer. The arrival of television gave us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes like those on the site you are now reading. |
