The History of Recipes
It is quite feasible to follow the history of written cooking instructions way back into the far past, in truth as far as pharonic Egypt, and quite possibly further than that. However, generally, these old cook books were just very basic hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the oldest recipe discovered, according to academics is a collection of ancient tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. As we move into The time of the romans 25BC a man called Apicius created a number of scripts detailing recipes prepared by wealthy Romans. In his publication, he recounts how the meals were divided into starters, main meal and dessert, something that is very familiar to us today. Aspicius also describes how the ancient chefs made use of many different herbs, including a few you will know such as basil, mint and asafoetida. Closer to modern times, we have a couple of cookery books which date from the 14th Century ; a cookery book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, they have no connection with the curry that appears on menues today, but rather accounts of the types of food on the tables of the rich people of the time. Later, in the 15th century, knights returning from the crusades brought us a variety of spices and herbs from the holy land, including parsley and basil. These new foods and spices was responsible for an explosion in publications on food, some of which still exist in private cookery archives. By the time we get to the twentieth century, cooking publications were highly popular mostly due to better eduction, people having more spare time and having more disposable income. |
