The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions back into distant history, certainly as far back into history as ancient Egypt, and maybe further still. Interesting though that maybe, generally, these early records were just basic hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe discovered so far, according to academics are a few tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. Moving on, there are a couple of recipe books which appeared in the 14th Century : a cookery book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the curry that is popular today, but rather accounts of the types of food cooked for the nobility of those days. During the following few centuries, the upper-class families of the West tried to lay on the most exotic banquets, and consequentially chefs and their collection of recipes were much in demand. However, it wasn`t until the 19th century that formal cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collating, testing, and writing down recipes common in their social group. By the advent of the 1900s, cookery publications were increasing in popularity mostly due to better eduction, increased leisure time and having more disposable income. |
