The History of Recipes
Transcribed cooking instructions as a concept can be observed back into the distant past, at least as far back into recorded history as ancient Egypt, and possibly even further than that. However, in the main part, these old cookbooks were just simple hieroglyphic recipes for preparing meals.
In an interesting twist, the oldest recipe discovered, according to historians are some stone tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Much later, in Roman times a man called Apicius assembled a number of scripts describing recipes prepared by the Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, entrees and dessert, something we still use today. Aspicius recounts how the cooks of Roman times made use of a good variety of aromatic flavors, including a few you will know like basil, mint and parsley. Over the succeeding few hundred years, the powerful families of Wesstern Europe competed with each other to offer the most exotic meals, and consequentially cooks and their collection of recipes were greatly in demand. Nevertheless, it wasn`t until the 1800s that haute cuisine and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collecting, trying out, and publishing recipes to allow everyone to enjoy them. When we get to the twentieth century, recipe publications were in great demand, mostly as a result of better eduction, people having more free time and having more money. |
