The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions back into the distant past, certainly as far back into recorded history as the early Egyptians, and quite possibly further than that. Interesting though that maybe, in the main part, these ancient recipes were just primitive hieroglyphic instructions for preparing food.
Interestingly, the oldest recipe found, according to historians are a few tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. As we move into The time of the romans 25BC a man called Apicius assembled a number of documents detailing recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Aspicius also recounts how the ancient cooks made use of many different herbs and spices, including many that are still in use today such as bay, mint and dill. During the succeeding few centuries, the powerful families of Wesstern Europe competed to serve the most exotic banquets, and as a result the best chefs and their recipe collections were greatly in demand. Even so, it wasn`t until the 1800s that haute cuisine and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to assembling, verifying, and recording recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, recipe books are highly popular mostly due to increased literacy, people having increased spare time and having more money. |
