The History of Recipes
We are able to follow the history of meal recipes far back into history, in truth as far back into history as the early Egyptians, and maybe further still. Having said that, sadly, these ancient cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to experts is a collection of clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. Later on, in The time of the roman empire around 25BC a roman called Apicius wrote a few documents which described recipes enjoyed by his fellow Romans. In his publication, he recounts how the roman meals were divided into hors d`oeuvres, main meal and afters, a style of dining still practiced today. Aspicius describes how the cooks of his times were skilled in the use of many different spices, including a few that will be familiar to modern chefs for example bay, rue and dill. Later, in the fifteenth century, people returning from the crusades brought back many new spices and herbs from middle-east cuisine, including basil and rosemary. These new spices and herbs created an eruption in cookery books, many of which still exist in private libraries. During the following few hundred years, the powerful and wealthy tried to serve up the most exotic banquets, and because of this the best cooks and their collection of recipes were highly sought after. Even so, it wasn`t until the 19th century the formal cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collating, testing, and publishing recipes of the day. By the time we get to the 1900s, cook books were increasing in popularity mostly due to higher levels of literacy, people having more spare time and disposable income. The arrival of television gave us celebrity chefs and the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes like those on this recipe site. |
