The History of Recipes
We can trace the history of written recipes far back into the distant past, in truth as far back into recorded history as pharonic Egypt, and possibly even further. However, these, ancient cookbooks were just simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
In fact, the most ancient recipe found, according to food historians are some ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Later on, in Roman times around 25BC a roman called Apicius created a few scripts which described recipes prepared by the Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into starters, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the cooks of his times made use of many different spices and herbs, including a few that will be familiar to modern cooks for example bay, mint and dill. Later on, we find two interesting cookery books which were published in the 1300s - a cookery book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Perhaps surprisingly, they are unconnected to the indian food that is served today, but rather accounts of the types of meals eaten by the upper classes of the period. Later on in the 1400s, people returning from the crusades brought us many new foods and spices from the Middle-East, such as coriander, parsley, and basil. The introduction of these new foods and spices was responsible for a torrent in publications on food, the majority of which still exist in private cookery archives. For the next few years, the families of Europe tried to lay on the most extravagent meals, and as a result cooks and their recipes were at a premium. Nevertheless, it was during the nineteenth century that fine cookery and cookery books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to collating, testing, and publishing the recipes of their peers. By the advent of the twentieth century, cookbooks were increasing in popularity as a result of increased literacy, more free time and having more money to spend. The introduction of the TV gave us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes like those on this site. |
