The History of Recipes
We are able to trace the history of meal recipes way back into antiquity, at least as far back into recorded history as the ancient Egyptians, and possibly even further. Having said that, mostly, these old cook books were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe found, according to experts are a few tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. As we move into The time of the roman empire 25BC a roman called Apicius wrote a collection of documents detailing recipes enjoyed by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main meal and desserts, something we still use today. Additionally, he recounts how the chefs of Roman times made use of many herbs and spices, including a few that are still present in modern kitchens such as basil, mint and asafoetida. As our culinary historical trip moves to more modern times we find two recipe books published in the fourteenth century - a recipe book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Don`t be fooled by the titles though, these two books have no connection with the indian curry that is familiar to us all today, but instead recipes for the types of meals prepared for the nobility of that time. In the 15th century, people returning from the crusades brought back a variety of foods and spices from the East, including spices like coriander, parsley, and basil. The introduction of these new foods and spices led to an explosion in recipe books, most of which are kept safe in private collections. Over the next few centuries, the powerful and wealthy competed to serve up the most extravagent banquests, and as a result the best chefs and their recipes became highly prized. Notwithstanding that, it was during the 19th century that cookery and recipe books became popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and recording popular recipes of the day. By the arrival of the twentieth century, cookbooks are highly popular as a result of increased literacy, people having increased leisure time and disposable income. The introduction of television gave us TV cooks and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everybody to search through massive numbers of recipes like the ones you can find on our web site. |
