The History of Recipes

It is quite possible to follow the history of recipes back into the distant past, at least as far back into recorded history as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, in the main part, these old recipes were just primitive hieroglyphic instructions for preparing food.

In fact, the oldest recipe discovered so far, according to experts is a series of stone tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated.

Progressing into The time of the roman empire 25BC a man called Apicius assembled some documents describing recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into starters, main meal and dessert, something that is very familiar to us today. Aspicius also informs us how the Roman cooks made use of many different spices and herbs, including a few that are still present in modern kitchens such as thyme, rue and parsley.

Later on, there are a couple of interesting books which were published in the fourteenth century ; a recipe book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Although the titles sound familiar, they are unconnected to the curry that appears on menues today, but rather accounts of the types of meals prepared by the chefs of the rich people of those days.

Later on in the 1400s, the Crusaders brought back many foods and spices from middle-east cuisine, including spices like basil and coriander. The introduction of these new herbs and spices was responsible for an eruption in publications on food, some of which still exist in private cookery archives.

For the centuries that followed, the powerful families of Europe competed with each other to serve up the most extravagent banquests, and because of this the best chefs and their recipe collections became highly prized. Even so, it was during the 19th century that fine cookery and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to assembling, testing, and recording recipes for their fellow cooks to enjoy.

By the time we get to the 20th century, recipe publications were in high demand, as a result of higher levels of literacy, people having increased free time and disposable income.

The introduction of the TV brought us cooking programs and the demand for the spin-off recipe books.

Which brings us neatly to the present day and the invention of the internet, permitting us all to search through massive numbers of recipes like those on this recipe site.
