The History of Recipes
Experts have found proof that recipes existed far back into distant history, at least as far back as early Egypt, and quite possibly further than that. Having said that, mostly, these ancient records were just basic hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. Later on, in Roman times 25BC a roman called Apicius created some scripts detailing recipes cooked by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were separated into starters, main meal and afters, a very modern way of dining. Aspicius recounts how the cooks of his times made use of many aromatic flavors, including many that are still in use today for example thyme, rue and parsley. Closer to modern times, we find two recipe books which were published in the fourteenth century ; a recipe book called `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, they are unconnected to the spicy food that we all know today, but instead descriptions of the types of food on the menues of the nobility of the time. In the fifteenth century, people returning from the crusades brought back many foods and herbs from Arab cuisine, including rosemary and coriander. The introduction of these new foods and spices was responsible for an eruption in manuscripts on cookery, the majority of which are kept safe in academic collections. During the succeeding few centuries, the powerful and rich competed to serve up the most extravagent meals, and because of this the best cooks and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the 1800s the formal cooking and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collating, verifying, and writing down popular recipes of the day. By the advent of the 1900s, cookery books are in great demand, as a result of better eduction, people having more leisure time and having more money. |
