The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into ancient history, in fact as far back into history as the Egyptians, and maybe even further. Interesting though that maybe, generally, these ancient cookbooks were just simple hieroglyphic or cunieform instructions for preparing food.
Later on, in The time of the romans 25BC a roman called Apicius compiled some scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his publication, he describes how the meals were separated into starters, main course and afters, a style of dining still practiced today. He also tells us how the Roman chefs were skilled in the use of a good variety of herbs and spices, including a few you will know like bay, mint and parsley. Later on, in the 15th century, people returning from the crusades brought us a variety of foods, spices and herbs from Arab cuisine, including spices such as parsley and basil. These new spices and herbs led to a torrent in manuscripts on cookery, many of which still exist in academic collections. The TV revolution gave us TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes such as those found on our web site. |
