The History of Recipes
Written cooking instructions as an idea can be traced far back into distant history, at least as far as the ancient Egyptians, and quite possibly further than that. In practice though, these, early cook books were just primitive pictorial instructions for preparing food.
As we move into The time of the roman empire around 25BC a roman called Apicius wrote a collection of documents describing recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were split into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the Romans made use of many herbs, including a few that are still present in modern kitchens such as basil, fennel and dill. Over the following few centuries, the powerful and wealthy competed with each other to serve up the most exotic meals, and consequentially the best chefs and their collection of recipes could command a high salary. However, it wasn`t until the nineteenth century that cookery and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, verifying, and recording the recipes that were being prepared for the better households. By the time we get to the twentieth century, cooking books are increasing in popularity mostly due to higher levels of literacy, more free time and having more money. |
