The History of Recipes
It is quite feasible to follow the history of recipes back into antiquity, at least as far back as pharonic Egypt, and potentially, even further back. Interesting though that maybe, sadly, these ancient records were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the most ancient recipe discovered so far, according to experts in ancient history is a series of stone tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. During Roman times around 25BC a man called Apicius created a number of scripts which described recipes cooked by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into starters, main course and afters, something we still use today. He also describes how the chefs of Roman times were skilled in the use of many spices and herbs, including many that are still in use today for example thyme, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought us many new foods, spices and herbs from Arab cuisine, including coriander, parsley, basil and rosemary. The introduction of these new foods and spices led to an increase in manuscripts on food, most of which are now in academic collections. By the arrival of the 20th century, cooking publications were starting to become popular due to higher levels of literacy, people having more spare time and a general increase in wealth. Like it or not, the introduction of television brings us celebrity TV chefs and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, allowing everybody to access massive numbers of recipes like the ones you can find on this recipe site. |
