The History of Recipes
Written recipes as an idea can be traced back into ancient history, in truth as far back as the early Egyptians, and possibly even further. Having said that, these, old cook books were just basic hieroglyphic recipes for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to experts is a collection of ancient tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. Later on, in The time of the romans 25BC a man called Apicius created some documents which described recipes cooked by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into appetizers, main course and afters, a very modern way of dining. This early Roman chef tells us how the ancient Romans used many herbs and spices, including a few that will be familiar to modern cooks such as thyme, fennel and dill. Continuing our culinary historical journey, we have two books dating from the 1300s - a recipe book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are not about the spicy food that we all know today, but instead recipes for the types of meals prepared by the chefs of the rich people of that time. Later on, in the 15th century, knights returning from the crusades brought back many new foods, spices and herbs from the holy lands, including spices such as coriander, basil and rosemary. These new culinary innovations led to an increase in manuscripts on cookery, the majority of which are kept safe in private libraries. Over the succeeding few centuries, the rich families of the West tried to offer the most exotic banquets, and consequentially chefs and their recipes became highly prized. Notwithstanding that, it was during the nineteenth century the formal cooking and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collecting, verifying, and publishing popular recipes of the day. When we get to the 20th century, cooking publications were starting to become popular due to better eduction, more spare time and disposable income. The TV revolution brings us celebrity TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to access thousands of recipes like the ones you can find on our web site. |
