The History of Recipes
It is possible to follow the history of `recipes` way back into the far past, at least as far back into history as the Egyptians, and maybe even further. However, these, early cook books were just very basic hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe discovered, according to Professor Solomon Katz, is a series of tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. Later on, in The time of the romans around 25BC a roman called Apicius assembled a collection of scripts describing recipes prepared by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, a very modern way of dining. Additionally, he informs us how the ancient cooks were skilled in the use of a wide range of herbs, including some that we all recognise such as thyme, fennel and asafoetida. Later, we have some recipe books from the 1300s - one book called `Forme of Cury`, and another called `Curye on Inglish`. Don`t be fooled by the titles though, these are unconnected to the curry that we all know today, but rather recipes for the types of meals prepared by the chefs of the rich and wealthy people of the period. Later on in the 1400s, knights returning from the crusades brought back many foods, spices and herbs from the holy land, including spices such as coriander, parsley, and basil. The introduction of these new foods and spices caused an eruption in manuscripts on cooking, the majority of which still exist in private collections. By the time we get to the 20th century, cooking books are in great demand, due to better eduction, leisure time and being a little richer. |
