The History of Recipes
It is quite feasible to follow the history of recipes far back into the far past, in fact as far back into history as ancient Egypt, and quite possibly further than that. However, generally, these old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
In fact, the oldest recipe found, according to academics are a few tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. Later on, in The time of the roman empire 25BC a man called Apicius created a collection of scripts describing recipes prepared by wealthy roman citizens. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvre, main course and dessert, something we still use today. Aspicius recounts how the early Romans were skilled in the use of a wide range of herbs, including a few that will be familiar to modern cooks such as bay, fennel and asafoetida. For the decades that followed, the rich families of Europe competed with each other to offer the most exotic banquets, and as a result chefs and their recipes were much in demand. Even so, it wasn`t until the nineteenth century that haute cuisine and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, verifying, and publishing popular recipes of the day. By the time we get to the 1900s, cooking publications are in great demand, mostly due to increased literacy, increased leisure time and having more disposable income. The arrival of television brought us TV cookery programs and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to access massive numbers of recipes just like those on the site you are now reading. |
