The History of Recipes

Recipes as a concept can be observed back into antiquity, in fact as far back as pharonic Egypt, and maybe further still. Interesting though that is, these, early recipes were just very basic hieroglyphic or cunieform instructions for preparing meals.

Fascinatingly, the most ancient recipe found, according to experts is a collection of tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated.

Progressing into The time of the roman empire around 25BC a man called Apicius compiled a collection of documents showing how to cook the recipes cooked by his fellow Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvre, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the ancient chefs made use of a wide range of herbs, including a few that are still present in modern kitchens like thyme, rue and parsley.

As our culinary historical trip moves to more modern times there are some interesting books which were published in the 14th Century - a recipe book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the indian curry that is served today, but rather accounts of the types of food prepared by the cooks of the nobility of those days.

In the 15th century, the Crusaders brought back a variety of foods and spices from the East, including coriander, parsley, and basil. The introduction of these new culinary ideas prompted an outbreak in recipe books, the majority of which are now in private cookery archives.

Over the following few centuries, the powerful families of Europe strove to offer the most extravagent banquests, and as a result the best cooks and their recipes became highly prized. However, it wasn`t until the 1800s that cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, verifying, and recording recipes to help cooks of their time.

When we get to the 1900s, cooking books were greatly in demand as a result of increased literacy, people having more leisure time and disposable income.

The arrival of TV brought us TV chefs and the demand for the spin-off recipe books.

And that pretty much brings us to the present day and the internet revolution, permitting us all to search through thousands of recipes just like those on this web site.
