The History of Recipes
It is possible to trace the history of written recipes back into history, in truth as far back into recorded history as ancient Egypt, and quite possibly further than that. Having said that, generally, these ancient cook books were just primitive pictorial recipes for meal preparation.
As we move into Roman times 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes enjoyed by wealthy roman citizens. He tells us how the roman meals were divided into hors d`oeuvres, entrees and afters, a very modern way of dining. This early Roman chef describes how the ancient cooks were skilled in the use of many herbs, including some familiar names for example thyme, fennel and parsley. During the next few centuries, the rich and powerful families of Europe strove to serve the most extravagent meals, and as a consequence, the best chefs and their recipe collections could command a high salary. Notwithstanding that, it wasn`t until the 1800s that cooking and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collating, verifying, and writing down recipes of the day. The revolution that is television brings us TV chefs and the demand for the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing us all to access massive numbers of recipes like the ones you can find on this web site. |
