The History of Recipes
Written cooking instructions as an idea can be observed far back into distant history, in truth as far back into history as the early Egyptians, and quite possibly further than that. Interesting though that maybe, sadly, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for preparing meals.
Progressing into Roman times 25BC a roman called Apicius wrote a collection of documents which described recipes enjoyed by wealthy roman citizens. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, main meal and afters, something that is very familiar to us today. Aspicius recounts how the ancient chefs used many spices and herbs, including some familiar names like thyme, fennel and parsley. Over the succeeding few hundred years, the powerful and wealthy tried to serve the most exotic banquets, and as a result the best cooks and their collection of recipes were highly sought after. Even so, it wasn`t until the 19th century that cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collating, testing, and writing down recipes that were common in the better off homes of the day. When we get to the twentieth century, cookbooks are increasing in popularity due to increased literacy, people having increased free time and being a little richer. |
