The History of Recipes
We are able to trace the history of meal recipes far back into history, in fact as far back into history as the early Egyptians, and possibly even further than that. Interesting though that is, mostly, these ancient cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to experts in ancient history are some stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. As we move into Roman times 25BC a roman called Apicius wrote a number of scripts showing how to cook the recipes enjoyed by his fellow Romans. In his works, he recounts how the meals were separated into starters, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the ancient cooks were skilled in the use of many different spices and herbs, including many that are still in use today for example basil, rue and asafoetida. During the next few centuries, the powerful and rich houses strove to serve up the best banquets, and because of this cooks and their recipes increased in prestige. Even so, it wasn`t until the nineteenth century that fine cookery and cookery books became popular. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and writing down recipes to help cooks of their time. By the time we get to the 1900s, recipe books are in great demand, due to more people being able to read, people having increased spare time and being a little richer. |
