The History of Recipes
It is actually possible to track the history of recipes far back into the distant past, certainly as far back into recorded history as pharonic Egypt, and quite possibly further than that. In practice though, in the main part, these ancient records were just basic hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe found, according to Professor Solomon Katz, is a series of tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. As we move into Roman times 25BC a roman called Apicius created a few scripts detailing recipes prepared by his fellow Romans. He describes how the meals of wealthy Romans were split into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the ancient chefs used many different spices, including a few that will be familiar to modern cooks like basil, mint and dill. During the following few centuries, the families of Europe competed to serve the most extravagent banquests, and as a result the best chefs and their collection of recipes were greatly in demand. Notwithstanding that, it wasn`t until the nineteenth century that cooking and cookery books became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collating, testing, and publishing recipes to allow everyone to enjoy them. By the advent of the 1900s, cookbooks were highly popular as a result of increased literacy, people having increased free time and being a little richer. |
