The History of Recipes
Transcribed cooking instructions as a concept can be traced back into antiquity, in fact as far into history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that maybe, these, early cookbooks were just primitive pictorial recipes for food preparation.
Progressing into Roman times around 25BC a roman called Apicius created some documents detailing recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the roman meals were divided into appetizers, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the Roman cooks used a good variety of aromatic flavors, including some that we all recognise such as bay, mint and asafoetida. For the centuries that followed, the powerful and rich competed to lay on the most extravagent banquests, and as a consequence, chefs and their collection of recipes were highly sought after. Even so, it was during the nineteenth century that haute cuisine and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collecting, trying out, and writing down popular recipes of the day. The introduction of the TV gave us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, permitting us all to search through thousands of recipes such as those found on sites such as this. |
