The History of Recipes
Transcribed cooking instructions as a concept can be tracked back into the far past, in truth as far back into history as the Egyptians, and potentially, even further back. Interesting though that is, these, early cookbooks were just simple pictorial instructions for preparing food.
In fact, the oldest recipe found, according to historians is a collection of ancient tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a roman called Apicius wrote some scripts describing recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and desserts, something we still use today. He also tells us how the Romans used a wide range of aromatic flavors, including many that are still in use today for example bay, rue and asafoetida. For the centuries that followed, the powerful and wealthy houses competed with each other to serve up the most exotic banquets, and as a result cooks and their recipe collections were greatly in demand. Nevertheless, it wasn`t until the 1800s that cookery and recipe books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to assembling, trying out, and recording the recipes of their peers. By the time we get to the 20th century, cook books are in high demand, mostly due to increased literacy, more free time and having more money. The arrival of television gave us cooking programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes just like those on sites such as the one you are reading now. |
