1 lb vermicelli
3 tbsp tahini
2 cloves garlic -- finely
1 minced
2 tbsp lemon juice
1 salt and pepper
1 tbsp water
1/2 cup to 3/4 cup olive oil
Directions
Mix tahini, garlic, lemon juice, salt, pepper, and water. Blend until
smooth. Gradually add the olive oil, while whisking until smooth and
medium thick. Boil the vermicelli and drain. Cool under water and
toss with sauce. Add fresh vegetables if desired.

The History of Recipes
It is possible to follow the history of `recipes` back into the far past, at least as far back into history as pharonic Egypt, and maybe further still. In practice though, generally, these old recipes were just very basic hieroglyphic or cunieform recipes for preparing food.
In fact, the oldest recipe in existence, according to experts in ancient history is a collection of stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Later on, in The time of the romans around 25BC a man called Apicius created a few documents describing recipes prepared by wealthy Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvres, main meal and dessert, something we still use today. He also informs us how the ancient chefs were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs such as basil, mint and asafoetida. For the decades that followed, the rich families of Wesstern Europe competed with each other to offer the most extravagent meals, and as a consequence, the best cooks and their recipes increased in prestige. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and recipe books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to assembling, testing, and publishing popular recipes of the day. The arrival of television brings us TV cookery programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes just like those on this recipe site. |
