The History of Recipes
We can trace the history of meal recipes far back into the distant past, certainly as far back into recorded history as early Egypt, and maybe further still. Having said that, in the main part, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the oldest recipe in existence, according to experts in ancient history is a series of ancient tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. As we move into The time of the romans 25BC a roman called Apicius wrote a few documents detailing recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and desserts, something that is very familiar to us today. Aspicius informs us how the ancient cooks used many aromatic flavours, including a few you will know such as thyme, fennel and asafoetida. Moving on, we find two recipe books which were published in the 1300s ; a book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these books are nothing to do with the indian curry that appears on menues today, but rather accounts of the types of food on the tables of the nobility of those days. Later, in the 15th century, people returning from the crusades brought back many foods and herbs from Arab cooking, including spices such as basil and coriander. The introduction of these new culinary ideas caused a surge in books on cookery, some of which still exist in private cookery archives. During the next few hundred years, the powerful and wealthy competed to offer the most extravagent meals, and as a consequence, chefs and their recipe collections increased in prestige. However, it wasn`t until the 1800s that cookery and recipe publications became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collating, trying out, and publishing popular recipes of the day. By the time we get to the twentieth century, cook books were in great demand, mostly as a result of more people being able to read, more spare time and a general increase in wealth. Like it or not, the introduction of TV gave us TV cookery programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes like the ones you can find on our site. |
