2 lb sour cherries, pitted
1 cup sugar
1 stick cinnamon
3 cup water
2 tbsp flour
1 cup heavy cream
1 cup red wine
Directions
Simmer the cherries, sugar, and cinnamon in the water until the
cherries are tender. Remove the cinnamon. Blend the flour with 3
Tbsp of cold water until smooth. Thin with 3 more Tbsp of water and
stir into the hot soup. Heat to boiling. Chill. Before serving,
stir in the cream and the wine.

The History of Recipes
It is possible to trace the history of written recipes way back into ancient history, in truth as far back into recorded history as pharonic Egypt, and quite possibly further than that. Interesting though that is, sadly, these old cookbooks were just basic hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the most ancient recipe discovered so far, according to food historians are a few tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Later on, in The time of the roman empire around 25BC a man called Apicius created a collection of scripts which described recipes prepared by his fellow Romans. He recounts how the meals of wealthy Romans were separated into appetizers, main meal and afters, something we still use today. He also informs us how the Roman cooks used many different spices and herbs, including a few you will know like thyme, fennel and asafoetida. During the following few hundred years, the rich families of Europe tried to serve the most extravagent banquests, and because of this the best cooks and their recipe collections could command a high salary. However, it was during the 19th century that cooking and recipe books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, testing, and writing down recipes to help cooks of their time. By the time we get to the 1900s, cooking publications are increasing in popularity as a result of higher levels of literacy, more leisure time and having more money to spend. |
